To customize the Add Currency and Switch Currency menus, choose File > Currencies and open the Currencies window. To add or remove a currency, select or deselect its checkbox in the Menu column. To add or remove multiple currencies at the same time, Control-click or Shift-click to select them and click the Get Info button in the toolbar. Choose Yes or No from the "Show in Menu" pop-up menu, make sure that the checkbox next to the pop-up menu is selected and click OK. Once you have decided which currencies must appear in the Add Currency and Switch Currency menus, click the Configure Menu button in the toolbar to organize the menus. To automatically group currencies select the "Automatically organize currencies using groups" checkbox. You can keep groups sorted by name or manually arrange them by dragging them in the list. If you don't want to show group names in the menus, deselect the "Show group names" checkbox. To automatically sort currencies, select the "Keep currencies arranged by" checkbox and choose the desired option (name, country, ISO code) from the pop-up menu. If you prefer to arrange currencies manually, drag them in the list. If you don't automatically group currencies, you can add separators to organize the Add Currency and Switch Currency menus. Click the Add button to add a separator, then drag it to the desired position.
Click Done to close the dialog.
